COCKTAIL MAKING 

Lychee Martini

 

60ml Vodka

30ml Lychee Juice

15 Sugar Syrup

 

  1. Pour ingredients over ice into Boston Glass

2. Shake

3. Strain into a martini glass

4. Garnish with whole lychee

  

 

PoPo Trio

 

15ml Sugar Syrup

2 slices Cucumber

30ml Gin

30ml Sake

15ml Lime Juice

1 egg (white only)

 

1. Place cucumber + sugar syrup in Boston glass, muddle

2. Add Ice, then add remaining ingredients

3. Shake

4. Double Strain into tumbler

5. Garnish with thin slices of cucumber

 

DUMPLING MAKING

Pork + Lemongrass Dumplings

 

500g Pork Mince

25g Chopped Lemongrass

2 Tbs Minced Garlic

2Tbs Minced GInger

ΒΌ tin Water Chestnuts (finely Chopped)

1 Tbs Light Soy Sauce

2 Tbs Sesame Oil

3Tbs Chopped Spring Onion

Pastry Cases

1. Mix ingredients together + season

2. Put roughly a teaspoon of mixture in middle of pastry and wrap

Mushroom + Vegetable Dumplings

 

50g Dehydrated Shiitake Mushrooms

(soak in water, then squeeze to release water)

100g Grated Carrots

100g Grated Chinese Cabbage

2 Tbs Minced Garlic

2Tbs Minced GInger

2 Tbs Sesame Oil

2 Tbs Light Soy Sauce

Pastry Cases – (we use vegan ones as alternative)

 

1.      Mix ingredients together + season
